I love the way they are so soft and indeed… fluffy! This is obtained with two added methods that you would not think of doing to a simple dinner roll. But they both make such a difference with this recipe’
- ½ C water
- 3 Tbsp bread flour
- ½ C cold milk
- 1 large egg
- 2 C bread flour or AP, remember bread flour will have a bit more gluten in it.
- 1½ tsp instant or rapid rise yeast
- 2 Tbsp sugar
- 1 tsp salt
- 4 Tbsp butter, softened
- 1 Tbsp butter, melted ( Hold till the rolling. )
- Micro wave the Water and Flour till you get this Paste like consistency, 20 seconds at a time, and stir, total of 1 min, ish
- Then add that to the bowl, and continue with all wet ingredients mix, then add yeast.
- Mix till blended, and add flour slowly, eventually putting on board and kneading.
- Cover and let rise. 1 hour.
Roll out the dough and either spread butter all over, or use a filling. For butter, spread out all over and then cut into 12 Strips. For Filling, cut first, and only fill enough to roll, leave a bit to crimp with. Then place in a round pan and proof again for 1 hour.
For Plain dinner Rolls, just butter and cut into 12 strips and roll up. Place in pan and let raise again for 1 hour and bake at 350* for 20-25 min.
For a Desert roll, using either a Jam, or fruit filling such as cherry pie filling.
For a Breakfast roll, use Cinnamon and brown sugar, and you can also ad nuts if you like.
